Ok, so Blueberry dumplings is one of my favorite desserts. It is so soothing. Now i might be biased because I love blueberries, but it also is a dish my mom used to make when I was a child. It can be enjoyed cold, or warm, and with some whipped cream or milk poured on top. And don't forget about ice cream, if that's your pleasure. This recipe is gluten free, and dairy free.
You'll need:
1 quart of blueberries (I use frozen)
2 cups of water
1/4 cup of almond, oat, or cashew milk
1 stick of butter, or butter substitute
1 tsp baking powder
1 tblsp plus 1 1/2 cups of monk fruit sugar replacement, or stevia granulated sugar
1 tsp vanilla extract
1 tablespoon of lemon juice
1 cup all-purpose gluten free flour blend with xantham gum
pinch of salt
You will place the water in the pot along with the blueberries, 1 1/2 cups of sugar, 1 tablespoon of lemon juice from a freshly squeezed lemon, and 1 tsp of vanilla extract. Allow the mixture to come to a boil. While it is cooking mix the gluten free flour with 1 tablespoon of the sugar, baking powder., and pinch of salt. Add the butter or butter substitute and mix it in with your hands, or pastry cutter. Add the milk, and miix until all ingredients are blended. As the water and blueberries come to a boil, drop the dough mixture into the water in 1/4 cup balls. Turn heat down and cover for 20-30 minutes. Do not stir while cooking. When finished, allow it to cool a little (if you can), and enjoy!

I know it's September, but mangoes and but mangoes and bananas never go out of style. This delicious and refreshing mango banana smoothie, will be sure to fill you up, and keep you going until dinner. All you need is 1 ripe mango, 1 banana, 2 cups of creamy oat milk, 1 scoop of vanilla plant protein, 4-5 ice cubes, 1 tsp of vanilla extract, i tsp cinnamon powder. Blend all of it in the blender until properly mixed and ice cubes are thoroughly crushed. Cut some pieces of fruit for the top, and enjoy!
